Hi everybody!!! I promised to post more recipes, so here's another one: Risotto con la Luganega (Rice with Sausage)... or Risotto alla Monzese.

As the name says, it's a typical plate that you can find in the city of Monza.
Ingredients:
- Olive Oil
- Onion
- Sausage
- White Wine
- Salt
- Rice
- Saffron
- Chicken Bouillon Cubes (one per person)




(it could cook for 9 or 10 minutes, it depends by the rice quality)

Ok ... I told to [info]gatcat that I was in point to take some photos while cooking to show some recipes of mine, and this is the result! ;) =D
There aren't so good because I didn't have enought time; I didn't want to overcook the salsa!!! XD ;)

Anyway, the recipe's names is Ravioli "Piccanti" al Brasato e Carote con Erbe e Piselli ("Hot" Pot Roast and Carrots Ravioli with Herbs and Peas) ... uff! What a long name! :P
(Question: Are you interested in reading my recipes? ... if "yes", I can post more someday =)

Ingredients:
- Ravioli al Brasato e Carote (Ravioli stuffed with Pot Roast and Carrots)
- Olive Oil
- Tomatoes Sauce
- Onion
- Minced Garlic
- Peas
- Salt
- Minced Basil
- Minced Laurel
- Minced Thyme
- 1Hot Pepper (very small)

















So, put into the water two tablespoonful of salt (for two persons) and wait until it starts boiling; meanwhile you can prepare the salsa:
Put into a frying pan some olive oil to fry some very fine sliced onion (a tablespoon and half), when the onion becomes "golden" you can put some tomato sauce into the pan (keep moving the salsa every 2-3 minutes).
After 15-20 minutes you can put add to the salsa the herbs (a teaspoonful or less for each one: minced basil, minced laurel, minced thyme ... and minced garlic too) and peas; after 10 minutes you can put a very very very little piece of hot pepper and the salsa is ready to be used (time of cooking: 30 minutes total ... more or less)

When water starts boiling you can put the ravioli and wait 8 minutes, then you have to "scolare" (remove) the water - sorry, I don't know how to translate this word! :P

After all of this you can replace the ravioli into the pot a mix them with the salsa! =D
I hope to have explained it well ...
Suggestion: Try to taste the salsa all the times for being sure that it's good enough.
